I absolutely love lentil soup! Not only is it a great source of iron, but it’s tasty and my kids love it, too! Give it a try!
3 cloves of garlic, chopped
1 bag of dried lentils
1 tsp salt
1 tsp pepper
1 bullion cube
3 bay leaves
Chop up your onion and garlic, nice and fine. Sauté together, starting with the onion and then adding the garlic after 3 minutes.
In another pan, pour in one bag of lentils and add water to cover.
Add salt, pepper, bullion, and bay leaves to the lentils.
Bring lentils to a boil, and then simmer for 30 min. Be careful to keep the water level just above the lentils. Do NOT over cook!
Mix in the onions and garlic to warm them back up and let the flavors all merry.
